Basket Or Oven? Decide This First
Everything else follows from this, and brand does not enter into it.
A basket air fryer is a deep, enclosed drawer with a fan above it. Air circulates violently in a small space, which is why it crisps better than an oven and why it heats up in a couple of minutes. It cooks one layer of food well, and one layer only.
An air fryer oven is a countertop convection oven with a strong fan. It holds multiple trays, which means several things at once, but the air moves through a larger cavity so the crisping is less aggressive and preheating takes longer.
For protein-first cooking the question is simply how many portions you cook at a time. Two people eating chicken and vegetables: basket. Batch-cooking five days of meals on a Sunday: oven, without hesitation.
Bottom line: A basket cooks one layer properly. Overfill it and you are steaming, not air frying — food browns where air touches it, and stacked food has no air between the pieces. This single mistake accounts for most disappointment with these machines.

Capacity is printed in quarts, which tells you the volume of the basket and not the amount of food you can cook properly in it. Those are different numbers, because the usable amount is set by floor area — the single layer the air can reach.
As a practical translation for protein:
- Around 6 quarts handles two to three chicken breasts in one layer. That is dinner for two, or two days of prep for one person.
- Oven-style units (20 qt and up) cook across several trays, so the constraint becomes total tray area rather than basket depth. This is the format that makes a Sunday batch cook possible in one session.
A deep basket with a small footprint is worse for protein than a shallow wide one of the same stated volume. Check the basket shape, not just the number.
The Low End Of The Range Matters Too
Every listing advertises its maximum temperature. For lean protein the minimum is at least as useful.
A machine that only goes down to 180 °F cannot reheat without drying out, cannot dehydrate, and cannot hold food warm. A range starting around 90 °F opens up reheating leftovers without turning chicken to leather — which, for meal prep, is something you do far more often than you cook from raw.
At the top end, anything reaching 400–450 °F will brown protein properly. Beyond that the number is marketing.
The Coating Question, Stated Accurately
Non-stick coatings have come under scrutiny, and “PFAS-free” now appears on listings as a selling point. It is worth being precise about what that claim is.
PFAS are a large family of fluorinated compounds used in non-stick surfaces. A PFAS-free ceramic coating means the manufacturer states the surface does not use them. That is a genuine specification difference and a reasonable thing to prefer.
What we are not going to tell you is that a conventional coating in good condition will harm you — that is a more complicated question than a product page can settle, and we are not going to pretend otherwise to sell an appliance. What is uncontroversial: any non-stick surface degrades if you take metal utensils to it or run it empty at maximum heat, and a degrading coating is a reason to replace the basket whatever it is made of.

What You Can Safely Ignore
- Function counts. “9-in-1” and “16 functions” mostly describe preset time and temperature combinations, not different hardware. A machine with a dial and a good temperature range does the same jobs.
- Fan speed numbers in isolation. More speeds give finer control, which is genuinely useful for delicate items. It is not a proxy for cooking power.
- Included recipe booklets. Usually a handful of pages of chips and wings. Not a reason to choose one machine over another.
